In our 2nd edition of EATALCHAM, we had the pleasure of sitting down with Mr Roberto Guiati, the visionary owner of Zenzero Restaurant & Wine Bar in Kuala Lumpur. Celebrating its remarkable 10-year anniversary recently, Zenzero has carved a niche by offering an authentic Italian dining experience that goes beyond exquisite cuisine.
1. As the owner of Zenzero Restaurant and Wine Bar, what motivated you to establish an Italian dining establishment in Kuala Lumpur, and how do you ensure an authentic Italian experience for your patrons?
When I started Zenzero Restaurant & Wine Bar 10 years ago, in fact, we recently celebrated our 10-year Anniversary, I wanted to build a restaurant where our patrons would taste authentic Italian food without breaking the bank. I knew there was a gap in the market as most Italian restaurants were in hotels and were way overpriced. But for me, it wasn’t just about the food, but it was about creating an Italian experience from the moment you walk in, providing a welcoming experience, so typical in Italy, throughout the whole dinner, without the stiff and formal feeling of a fine dining experience yet filling pampered but at home.
To achieve this and constantly ensure we keep delivering on our promises and vision I team up with Italian professionals both in the kitchen, where our Executive Chef guarantees the best and authentic ingredients are sourced following the traditional recipes and as well on the floor where Italian and local managers will welcome our guests as if we were inviting them to hour home.
2. How would you define an authentic Italian dining experience?
At Zenzero we are traditional in terms of recipes as authenticity is one of our main goals, having said that we do embrace local spices such as ginger (of which Zenzero is its Italian translation) or all types of Chili.
We have several dishes that have been on the menu for the last 10 years, The classic Homemade Pappardelle with Beef and Lamb Ragout, or Angel hair with Bottarga and Prawns to the most recent addition but very popular Lobster Paccheri.
3. With Italy’s renowned wine culture, how do you approach the selection of wines for Zenzero? Are there any specific wine and food pairings you would recommend from your extensive collection?
We do pride ourselves in having one of the most extensive Italian wine lists in KL. We cover all regions of Italy with a specific focus on Tuscan wines. But we also offer numerous labels from France and other world wines. Our wine experts will always be ready to suggest the best wine according to your meal and tastes.
4. Regarding ambience and hospitality, what efforts do you make to create a welcoming atmosphere that mirrors the warmth and charm of Italian culture? How does Zenzero aim to transport diners to a genuine Italian dining experience in the heart of Kuala Lumpur?
As I mentioned earlier this plays a big role in making sure our patrons do receive an Italian experience. That’s what Italy is about, our Italian chef and managers as well as me love to discuss and get to know our guests, therefore we spend ample time listening to everyone’s stories and suggestions. Many of our patrons travel the world and dine in the best places, we like to hear those experiences and learn from them.
5. Operating an Italian restaurant in Malaysia may pose unique challenges. Can you share some insights into the specific obstacles you’ve faced and overcome in bringing and maintaining an authentic Italian dining experience in Kuala Lumpur?
I’m sure all my peers will agree in saying that Staffing is one of the main challenges, but we can’t look at it as a problem, we are 10,000 km away from Italy and it’s our job to train properly such a diverse workforce, transferring our passion to all our staff, making them feel they are part of a family, making them understand what Italian hospitality and authentic food is about. One of the greatest rewards for me is seeing my staff grow and improve with such values and passion.
